Brewers who depend upon extract for fermentable malt sugars needn’t worry about it as much as all-grain brewers, but even extract-based IPA can sometimes benefit from water additions to help the hops pop. Rinse the grains with 2 qts. (2 L) hot water. Add water until there is about 7.5 gallons (28.4 L) in the kettle. Bring to a boil, remove the kettle from heat and stir in the malt extract.
